I thought I would share a special pancake that I make! You've probably seen me post my paleo banana pancakes that I make a ton, but this is a twist that adds extra protein! 

I chose to use up some Vega vegan chocolate protein powder and some Isopure whey-isolate protein dutch chocolate. I did half a scoop of each. The Isopure adds more sweetness! 

I also added my favorite dairy-free chocolate chips. You can chose to make this dairy-free if you would like, just skip the whey-isolate powder.

Yields 3-4 pancakes


  • 1 banana

  • 1/2 cup or 3 egg whites

  • scoop of your favorite protein powder

  • optional coconut flour (for consistency)

So the whole planning process gave me a ton of anxiety. Even up until walking through security I was hoping I didn’t miss anything and they would let me back into the country.


We decided to be pioneers and plan our own trip. No travel agency.


First of all, go ahead, try and call the Cuban embassy in Washington, D.C. Three weeks later, no one answered.


We went to South Beach for the weekend before heading off to Havana Monday early afternoon.

Looking for a healthier swap for game day? This is delicious!


Healthier Seven-Layer Dip


2 medium ripe avocados
2 Tbsp. fresh lime juice
1 dash sea salt (or Himalayan salt)
1 dash ground black pepper
8 oz low-fat plain Greek yogurt
2 tsp. all-natural taco seasoning, no salt added
1 (15-oz) can nonfat refried beans, warm
4 medium tomatoes, chopped
1 yellow pepper, chopped
1 bunch green onions, ends trimmed, sliced thin
2 Tbsp. shredded cheddar (or pepper jack) cheese (½ oz)


1. Mash avocados in a medium bowl.
2. Add lime juice, salt, and pepper; mix well. Set aside.

I never thought I had the spare time to take on something else, I work full time but my evenings were usually spent scrolling Instagram, watching reality TV or makeup tutorials on YouTube... sooo "busy" right?

When I realized I could put my time to good and have a little passion project that I run completely online AND not only help others but hold myself accountable; I found the time to make this coaching business work.

We just got hit with some major wind advisories (Chicago is living up to it's nickname), so I've been having to get creative. No flowy skirts will work unless I want numerous Marilyn moments. 


I really love this challenge because it gives me a new way to look at my fall wardrobe. How can I use unexpected colors and textures? What sweater can I make look good with a dress. How many times can I wear black tights before someone wonders if they are all the same pair?
